I have another pierogy filling recipe for you today.
Potato and cheddar cheese.
These are wonderful with sour cream and mushroom gravy.
It's the favorite in our house.
Potato and Cheddar Pierogy Filling
1 tablespoon grated onion
2 tablespoons butter
2 cups of hot mashed potatoes
1 cup or more of cheddar cheese
salt and pepper to taste
Cook the onion in the butter until tender. Mash it in with the potatoes and cheese. Season to taste with salt and pepper. Fill and cook the pierogies according to directions in the dough recipe.
Scoop about a teaspoon of filling into each dough circle and pinch it closed. Lay them on a cookie sheet in rows and freeze them. Once
they are frozen you can just pop them into freezer bags.
