Best Pancake Recipe


BEST PANCAKES

When I first graduated college I was briefly unemployed. I would get up at 6:00 in the morning to watch my favorite news show, Canada AM, before heading out to hunt down a job. There was a weekly segment devoted to cooking.
One morning they featured a chef who worked in an exclusive restaurant in Toronto. He was famous for his pancakes, and actually divulged his secret recipe. It's so-o-o-o-o good! And my family lo-o-o-o-o-ves them! This recipe makes 10-12 four inch pancakes. If there are any leftovers I freeze them in individual storage bags. They can be popped in the toaster for a quick breakfast on a busy morning.

 CANADA AM PANCAKES FROM 1977

 4 eggs
2 teaspoons sugar
1 teaspoon baking soda
1 ½ cups flour

1 cup milk

margarine or butter

oil

Mix the dry ingredients with a wire whisk.
Add eggs and milk.
Mix until fairly smooth.


Cook on a medium griddle in margarine or butter until bubbles appear on top. 
TIP: To prevent margarine or butter from burning add a tablespoon of oil.

Flip and cook until lightly browned.




Top with your favorite pancake syrup or fruit and dig in!

P.S. - Don’t forget the whipped cream!
